Catering student Darcie has big dreams of opening her own bakery

Catering student Darcie Brookes is dreaming of opening her own bakery when she completes Telford College’s catering course.

Formerly a pupil of Burton Borough School in Newport, Darcie applied at the college after discovering the offering at its Orange Tree restaurant.

“I chose catering because I’ve always loved cooking,” says Darcie. “I’m especially passionate about baking, I just like making anything sweet; cakes, pastries, you name it! I want to try everything and see what suits me best.

“I’m inspired by the creativity baking requires. When you make a cake, you can express yourself and decorate it however you like. It’s also forgiving – if you make a mistake, you can try again.”

The Orange Tree restaurant is open to the public for certain lunch services, offering high quality meals at affordable prices – giving students practical work experience without leaving the campus.

“When the restaurant is open, I usually ask to work on desserts. I still enjoy cooking other dishes, but creating new desserts is my favourite part,” Darcie says.

“We all get turns to run a service each. For my favourite service, we had an American-themed day – we all created a special menu with dishes such as brisket, pulled pork sandwiches and bagels. It was full of really fun and challenging creations!”

When she finishes her studies at the college, Darcie has her sights set on her future business. “I’d love to have my own bakery. I’d like to begin online, with a website where people can order cakes from home, and then grow from there. Maybe at some point, I’d like to have a stand at the Shrewsbury Food Festival in the future.”

Catering lecturer Robert Lee said: “Darcie has worked exceptionally hard in her practical lessons, her attendance is fantastic, and she’s demonstrated dedication in her English and maths sessions. She even won our ‘Student of the Year’ in catering’s end of year awards.

“She has performed brilliantly in the dessert section of our kitchen, and contributes positively to every service. This year, she’s really committed to developing her skills in all sections, as well as gaining experience out front.

“Catering is a fascinating and diverse industry. It’s not just about working in a restaurant – it’s about working hard and building a career that can take you anywhere in the world. Catering offers incredible opportunities, including the chance to run your own business and travel globally.”
